As per your requirement, you want user input in output forms.
The both way are right to provide the solution. but again some eccentricity is there, for Adobe you have to ADS server.
and for word, you can user any of existing OLE class or write your own code.
But i would suggest go for adobe (if you have ads server), it's easy to make the forms and if any changes comes in near future, you can do the changes easily.
Yes, you can follow the SO10 T-code to store the default static information in form.
